Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup cocoa powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup vegan marshmallow fluff
- 1/2 cup vegan butter, softened
- 1 cup brown sugar
- 1/4 cup unsweetened applesauce
- 1 tsp vanilla extract
- 1/2 cup vegan chocolate chips
- Graham cracker crumbs, for garnish
Instructions:
Preheat your oven to 350F 175C and line a baking sheet with parchment paper
In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt
In another bowl, cream together vegan butter and brown sugar until light and fluffy
Add applesauce and vanilla extract, mix until combined
Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms
Fold in vegan chocolate chips
Using a cookie scoop, drop spoonfuls of dough onto the prepared baking sheet, spacing them apart
Bake for 10-12 minutes, or until the tops are set
Let them cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely
Once the cookies are cooled, spread vegan marshmallow fluff onto the flat side of half of the cookies
Sandwich them with the remaining cookies
Roll the edges of the whoopie pies in graham cracker crumbs for garnish
