Ingredients:
- 4 Greek pitas
- 1 cup diced cucumber
- 1 cup diced tomatoes
- 1/2 cup sliced red onions
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup Kalamata olives, pitted and sliced
- 1/4 cup tzatziki sauce
- 1 tablespoon extra virgin olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions:
In a large bowl, combine cucumber, tomatoes, red onions, feta cheese, parsley, and olives
In a small bowl, whisk together olive oil, lemon juice, salt, and pepper to make the dressing
Drizzle the dressing over the vegetable mixture and toss to coat evenly
Warm the Greek pitas in a skillet or microwave until soft and pliable
