Ingredients:
- 1 1/2 pounds baby potatoes, halved or quartered
- 2 tablespoons olive oil
- Salt and black pepper to taste
- 1/4 cup crumbled goat cheese
- 2 tablespoons chopped fresh parsley
- 1 tablespoon Dijon mustard
- 1 tablespoon red wine vinegar
- 1 clove garlic, minced
- 2 tablespoons extra virgin olive oil
- 1 teaspoon honey
- Salt and black pepper to taste
Instructions:
Preheat oven to 400F 200C
In a bowl, toss the halved or quartered baby potatoes with olive oil, salt, and black pepper until evenly coated
Spread the potatoes on a baking sheet in a single layer
Roast in the preheated oven for about 25-30 minutes, or until golden and tender, flipping halfway through
While the potatoes are roasting, prepare the dressing by whisking together goat cheese, chopped parsley, Dijon mustard, red wine vinegar, minced garlic, extra virgin olive oil, honey, salt, and black pepper in a small bowl until smooth
Once the potatoes are done, transfer them to a serving bowl
Drizzle the dressing over the roasted potatoes and gently toss to coat evenly
Serve warm or at room temperature
