Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup vegan butter, softened
- 1/2 cup brown sugar
- 1/4 cup white sugar
- 1/4 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup vegan chocolate chips
Instructions:
Preheat oven to 350F 175C
In a mixing bowl, cream together softened vegan butter, brown sugar, and white sugar until smooth
Add applesauce and vanilla extract, mix until well combined
In a separate bowl, whisk together flour, baking soda, and salt
Gradually add dry ingredients to the wet mixture, stirring until a dough forms
Fold in vegan chocolate chips
Scoop tablespoon-sized portions of dough onto a lined baking sheet, leaving space between each cookie
Bake in preheated oven for 10-12 minutes, or until edges are golden brown
Remove from oven and let cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely
